No matter what your job or business, things happen that are unexpected. Catering is no exception. You have to think on your feet and that's not easy when your feet are tired! Keep in mind, it usually works out, and you are the only one that feels that the problems were obvious.
Some of the problems I have had... transportation of items that lost their presentation in route, loss of an item onto the floor, not enough food, the list goes on. Sometimes, you have to learn the hard way to figure out how you will react and respond. One of my friends couldn't handle the issues with catering and switched to bakery catering only- which rarely has problems on the day of the event, other than heat. Whatever happens, always have some backup plans for just these types of mishaps.
When a couple of pans of brownies didn't cook all the way in the middle, I cut bars out the cooked portion and then made a whole other dessert by using the gooey brownie parts in parfait glasses with vanilla ice cream and hot fudge sauce. People loved them and gushed all over the spur of the moment fix-up. At one event, I removed a glass bowl of home-made lemon curd and dropped it, shattering the bowl and contents. Of course, I learned one fast lesson: don't transport in glass. But then, as a quick replacement, I bought a jar of lemon curd. I know, not what's expected, but no one knew any different (even though the store-bought curd was nowhere near as good as mine!)
